i feed my messors grass seeds (get them cheap from wilkinsons) and fish food flakes every 4 or 5 days if that. they never seem to take many insects so i dont bother that much.

Mine like insects as well as seeds. Fish food (flakes) they do not like them much.

It could be that they are preparing for hibernation, it has been a COLD trip to England so if they are just keep them in hibernation for a few months.

the ants shouldn't die during hibernation as long as they have had enough food in the last few weeks and im sure that antstore would have fed there colonies.

the ants will wake up from time to time to grab some food for the queen and workers, its just the eggs/larvae that will most likely die over hybernation as they need heat to develop :(

eggs and cocoon/pupae will not survive hibernation but larva can if they are far enough along the development stage and have been fed a lot before hibernation then they can survive similar to the workers.

I was wondering, if i was to put my Messor Barbarus in hibernation now, what would be the optimal time to bring them out?

i believe messor barbarus only require 2-3 months hibernation so January-February would be the best time to take them out if you hibernated them now.

South European ants prefer a hibernation period of 2-4 months so if you put them in hibernation know you can wake them up in February.
